Mama Guzman’s Garbanzo Beans Salad
6 – 8 Servings
Note: This recipe is garbanzo beans mixed with pico de gallo
   For the beans:
2 cups dried Garbanzo beans
3 ½ cups water
1 bay leaf
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 teaspoon crushed red chili peppers
2 teaspoons sea salt
1 teaspoon black pepper
   For the pico de gallo:
1 medium onion, diced
1 jalapeno pepper, seeded, diced
1 garlic clove, minced
2 medium tomatoes, diced
Juice of 1 lime or lemon
1 tablespoon extra virgin olive oil
¼ cup fresh cilantro, coarsely chopped
½  – 1 teaspoon sea salt 
½ teaspoon granulated garlic
Sort beans by spreading them out on a flat surface and going through them to remove any dirt, rocks, broken or odd shaped beans. Place the beans in a colander/strainer and thoroughly rinse. Add beans to a medium pot along with water, bay leaf granulated garlic, granulated onion, crushed red chili peppers, salt and pepper. Cook over medium heat 1 ½ – 2 hours or until beans are tender.
Drain beans in a colander then transfer them to a bowl. Let the beans cool to room temperature then place them in the refrigerator uncovered to get cold.
Once beans are cooled, add all remaining ingredients mix thoroughly, taste for salt and pepper; adjust the seasoning if needed.  
Cover and refrigerate until ready to serve.
